Siong Tong Gai is famous for their Signature Steam Fish, Signature Steam Three Treasures with Fish and Signature Steam Seafood in superior broths. This broth is a 30 year old recipe from their founder which is the anchoring base for their signature steam dishes. We tried one of their must try item on Siong Tong Gai Menu – Steam Three Treasures – using only live fishes such as Live Patin. Since they are also famous for authentic home-style dish, we felt that we should also try some of the chef’s recommendation cooked in Malaysian cuisine style.

We tried the Indonesian Curry Clam Set ($13.80++). The lala clams are large in lemak curry and best enjoyed by drizzling the rich curry atop steamed fluffy rice. The double boiled soup of the day with sweet radish and phoenix feet offers some comforting sip of warm soup. It also comes with a side dish of season vege – stir fried okra with fungus and hae bee.
The kitchen is helmed by a Malaysian head chef with 30 years experience and his full Malaysian team. I was told that this experienced chef is featured on Malaysia’s national papers. With a good environment, you can now sit back and enjoy freshly chef cooked dishes in Malaysian style with wok hei. The kitchen is filled with hissing woks, fast actions amidst verbal exchanges of Cantonese choir amongst the chefs.
Here’s our Siong Tong Gai review after trying their chef recommendations. The home-cooked dishes are definitely unique with special dishes such as 2-In-1 flavours dishes where you can enjoy a meat cooked in 2 flavours served in 1 dish. Their signature steam dishes served in deep pot on a table stove also lets you enjoy a piping hot meal. If you are someone who is into live fish steamboat, you will be happy to know that they also served live fish of your choice in a steamboat.
The main dining hall is manned by an experienced and humble hall manager who has once served the elites of a prestige F&B outlet in an uptown area of Singapore. With her accommodating disposal, pleasant personality and experience, she is here to ensure a pleasant and smooth dining experience.
If you are looking for a spacious classy dining place with your love ones at Orchard road, do give them a try. The relaxed ambience with well furnished interiors, are a joy to dine in.
They have large VIP rooms that can host up to 36 pax for any corporate, private diners or any gathering you have in mind. Do book with them to secure a room if you need a large private place to eat in Orchard. These are round banquet tables with lazy Susan for easy sharing of food.
They also have various live seafood such as choose your own live fish available in patin, seabass, soon hock, leopard coral grouper and star grouper imported directly from Malaysia. Besides these live fishes, you can also choose other premium selections such as red fish, dragon grouper, turbot, jade perch, sliver catfish, red tilapia and more.
We were told that the live patin fish is cooked to 70% doneness in the kitchen, it will be the perfect texture for consumption once it is served on the table stove like a hotpot fish where it will be 100% cooked. Signature Steam Three Treasure with Fish of your choice consists of a live patin fish, squids, prawns and giant lala in a comforting broth.
The Patin fish has buttery succulent flesh in garlicky fish broth. The flesh is interlaced with fats that melt in your mouth. You can definitely feel the freshness in this method of cooking without overly complex flavours. Fish size is good enough for 2-3 pax sharing. The comforting clear broth has undertones of prawn flavour and gets richer the longer the broth simmers with the ingredients.
Although Siong Tong Gai is famous for their steamed fish, for those who love chicken, you should also try their Steam Kampung Chicken (Half chicken for $28.80++). The chicken has distinctive layers of fats and lean meat layers, certainly very tender and savoury. You can taste an undertones of sweet wine used in this steam dish. Since Kampung chicken are used, the meat are more springy and lean. Golden hues of natural juice from the chicken melt and flavour the soup base while it cooks. The coriander and ginger used also enhances the natural sweetness of the chicken. We will definitely be returning for this dish as well.
They also have this Steam Clam ($28++) which is plump and juicy lala in their signature broth with a generous amount of ginger, chilli padi and scallions. Every sips from the steamed lala hotpot is piping hot and comforting. If you love the viral lala hotpot, this could make you happy and satisfy your cravings.
They also added 3 new dishes to their menu including Stir-Fried Pork with Green Pepper, Golden Crispy Chicken Drumettes and Double Delight Pork Chop. Golden Crispy Chicken Drumettes ($18.80++) – the chicken drumettes are coated in sweet gooey Korean sauce while the crunchy mid wings are deep fried in pepper salt. We love these 2-in-1 chicken wings dishes where we can enjoy 2 different flavours in 1 dish. Enjoy your Korean style wings with refreshing icy booze. During our visit, we also overheard a returning customer who is ordering takeaway for these fried chicken while she is having her meals with her family.
Double Delight Pork Chop($18.80++) is also a 2-In-1 dish, where the crunchy thick pork chop is coated in a sweet steak sauce and another in creamy mayo sweet onion sauce. They even have table service to portion your chops so you can eat it with ease.
For those who love some Chinese style cuisines, they have also introduced some Singapore’s favourite dishes such as spicy fried chicken with numbing peppercorns and red pepper, sweet & sour popcorn pork of tangy crispy bites, stir-fried pork with green pepper that is full of wok char pork with peppery flavour.
Crispy Homemade Tofu with Minced Meat ($13.80++) atop sweet tender choy sum. This is a homemade tofu that is so delicate and jiggly. The soft texture melts in your mouth like custard and only held together by a thin crispy crust.
Other dish that is also recommended by the chef is Fried Prawn with Soy Sauce ($28.80++). Prawns are caramelised sweet and smoky. The crunchy shell houses some savoury firm meat too.
