HK crispy shrimp cheong funHK Crispy Shrimp Cheong Fun ($5.50) with crunchy center and bouncy shrimp. This rice roll is made from scratch with a steamer. A cheese cloth is laid on the steamer where a fine batter of rice roller batter is poured on top. The rice batter is steamed until a smooth rice sheet like a translucent skin is formed. Two crispy shrimp rolls are then encased within this smooth rice skin and served with special soy sauce. The crispy shrimp roll with chewy skin is an interesting combo paired with some sweet and mildly salty soy sauce. They also have 5 other types of cheong fun made with various ingredients.

bake

egg-tartThey have 3 types of baked dim sum. HK Egg Tarts, Po Lo Bun and Baked Char Siew Bun are all sold out on our visit. The chef has graciously promised to make us some freshly baked HK egg tarts so that we can review their bake items. We chose to try their HK egg tarts ($3.70) which is made and baked in house before our eyes. Made with a combo of different doughs and a thick batter of egg batter, it is a time consuming and laborious bake dim sum. Every tart crust is beautifully hand crafted in a mould and pour with a creamy looking egg batter. The result is a crisp, flaky golden crust with silky smooth hot egg custard that almost jiggles when we breaks it into halves. We had it fresh out of the oven and it is good.

Ma Lai Gao Cantonese Sponge Cake is also made in house. The dim sum baker chef hand beats a thick gooey batter made with various ingredients from scratch. She then weighs each batter carefully before pouring them in a large rectangular bake tray heading for the steamer.
