For example, a family size large grouper was price tagged at $69.80 during our visit and a platter of several mantis prawn are at $38.80. This is also Singapore first braised lamb head served in a restaurant, prepared using traditional methods and ingredients. They provide table service to dispatch the braised lamb head into its several components to make it a breeze to enjoy. It is also during this dispatch table service, the waitress who dispatches the various offals from the lamb head, will recite auspicious well wishes with a festive cheer that heightens the experience of eating a whole braised lamb head.

braised sheep head singaporeBeing able to enjoy these braised sheep head in Singapore is a very rare opportunity as it is hard to get whole lamb head. These lamb head are cooked to order fresh daily in a traditional pressure cooker with their secret sachet of spices and herbals to enhance the flavour and aroma of the lamb head. The lamb head has various offals such as lamb eye, tongue, ear and very tender lamb cheek meat. The skin is well braised with no gamey taste at all.

The collagen rich melty skin pairs well with the sweet and spicy garlic sauce provided. When the lamb head is stripped to the bones, get the waitress to assist with retrieving the lamb brain within. Enjoy the last offal served on a separate dish – buttery soft lamb brain – drizzled with garlicky sauce. If you love wraps, get their handmade popiah skin (from $1.50) and enjoy the lamb parts with fresh garlic, sweet onions in a wrap.

We also tried their signature lamb offal soup in claypot (member price $15.80). Since they are well versed with lamb cuisines, this dish did not disappoint. The offals are finely cut into strips and served piping hot in a claypot. There are fresh coriander and chilli oil, to add to the soup for more aroma and for dipping the offals respectively. The soup feels nourishing and comforting with mix tender offals and a mild hint of pepper.

Live grouper steamed in Hong Kong style ($69.80 member price) is a large family size grouper that is the length of my forearm. The fish is definitely fresh and steamed to perfection. Meat is tender, moist and meaty with a mildly springy skin. Drizzle some of the superior soy sauce with scallion aroma over the fish meat for the perfect bite. This is a must order dish for family gathering.

bbq skewersThey housed a 3 meter long charcoal bbq grill stove within their kitchen, as their skewers are part of their signature BBQ food that is popular with the diners. There are various charcoal bbq seafood, barbecue meat skewers, offals and greens you can choose from in the menu. These are all barbecued for you by their chef and served on a hotplate stove to keep them hot while you enjoy them over a cold glass of beer. You can also find some authentic Chinese style bbq grilled leeks with bbq chilli seasoning and grilled whole egg plant topped with generous amount of garlic bbq sauce here. Their bbq meat skewer starts from an affordable price of $1 each for members.

Live mantis prawns ($38.80 member price) baked with salt and pepper. These prawns have lobster like meat texture with a briny punch and are very addictive with a dry salt and pepper seasoning.

pork-in-scoopFried pork in scoop ($21.80 member price) is a famous Northeastern Dongbei cuisine. These sweet and sour pork are encased in a thin crisp crust and a fun sauce with a stringy pull when eaten hot.

Singapore style wok stir fried lala ($21.80 member price) in ginger & green onion. Enjoy these umami & juicy clams with a springy texture in a savoury onion and gingery sauce.
