Beauty in The Pot has specially imported these giant lala that comes from an ocean near Philippines – known for their freshness and sweetness – as the main ingredients for this new limited-time soup base.
They also specially selected Yanghe Ocean Blue BaiJiu for its fruity aroma as a finishing touch to Beauty in The Pot’s Flaming Ocean Bai Jiu Lala Broth.
This is the flow of the table side cook from scratch broth showmanship. The aromatics such as julienned ginger, minced garlic and chilli padi is stir fried in a hot base of fragrant oil till aroma is released. Hua diao jiu and giant lala is added to the soup pot and lightly stir to infuse the lala with the sweet and nutty cooking wine flavour.
Next, rich pork bone soup is added to build the lala broth which also helps to enhance the sweetness of giant lala. Fried garlic and chopped celery are also added for more flavours. Seafood and meat when combined makes a perfect umami soup flavour.
Lastly a generous ladle of Yanghe Ocean Blue BaiJiu is set ablaze and poured on the bubbling lala broth. We were told this is the Elevated version of the trending Lala hotpot and they said that every diner should try this broth at Beauty in The Pot. The lala broth now has a pronounced fruity flavour infused in it with a sweet undertone.
